Just one look at the picture and I instantly feel in love. A few months back I seen this meese circling around everywhere but during that time it was winter time, so I did not really want to fire up the grill and smoker. Now fast forward to stay-at-home orders being issued, I thought to myself what a better time than now to go ahead and try out that amazing looking meme that I seen a while back(That sounds like a weird sentence “Try out the meme”, Can’t say I have ever really said that before)

Ingredients

  • 12 whole jalapeños
  • 15 T. cream cheese
  • 1½ lbs. marbled brisket
  • 12 thick-cut strips bacon
  • 2 T. kosher salt
  • 2 T. coarse-ground pepper
  • 6 oz. BBQ Sweet Glaze

Instructions:

  1. Slice one side of each jalapeño from stem to tip.
  2. Slice across stem end; remove seeds and membranes.(PLEASE WEAR GLOVES!! JUST TRUST ME)
  3. Place jalapeños on baking sheet; bake at 300ºF for 10 minutes.
  4. Remove from oven; place jalapeños in bowl of ice water to extract additional seed oil.
  5. Cover each jalapeño’s inside bottom with approximately 1 T. cream cheese; add 2 oz. brisket. Close pepper around stuffing.
  6. Wrap with bacon; add pinch salt and pepper.
  7. Place peppers on baking sheet; bake at 350ºF for about 30 minutes. Remove.
  8. Apply approximately 1 T. glaze to each.
  9. Serve immediately.
